Cauliflower is having its moment, and for good reason! This cool-season crop is packed with fibre, vitamin C, and antioxidants. It’s a superstar in the kitchen, too, taking on flavours beautifully whether roasted, riced, or turned into a creamy soup.
While cauliflower is delicious simply roasted with olive oil and salt, or simply steamed with butter, we love giving it a new twist. This week’s featured recipe pairs cauliflower with savoury miso and garlic, creating a deeply flavourful dish that’s perfect for cozy dinners or impressing guests.
Roasted Miso Garlic Cauliflower
1 head cauliflower, cut into florets (or into steaks if you like)
2 Tbsp white miso paste
1 Tbsp soy sauce
1 Tbsp maple syrup
1 clove garlic, minced
½ tsp fresh ginger, grated (optional)
Neutral oil (olive or other), salt & pepper
Instructions:
Preheat your oven to ~425°F (≈ 220°C).
Toss cauliflower with oil, salt & pepper, then spread on a baking sheet. Roast ~20 mins until starting to brown.
Meanwhile, mix miso, soy, maple syrup, garlic (and ginger if using).
Remove cauliflower, brush or toss with miso-garlic sauce, roast another 10 minutes (or until sticky & golden).
Serve hot — garnish with something fresh (green onions, sesame seeds, parsley) if you want extra colour & texture.
