Featured Recipe: Cheesy Zucchini Fritters

A perfect snack, side dish, or even breakfast!

Ingredients:
2 medium zucchinis, grated
1 tsp salt
1 egg
1/3 cup flour
1/4 cup grated Parmesan or cheddar
2 green onions, chopped
Pepper to taste
Olive oil for frying

Instructions:
Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Then squeeze out as much moisture as possible.

In a bowl, mix the zucchini with egg, flour, cheese, onions, and pepper.

Heat oil in a pan over medium heat. Drop spoonfuls of the mixture and flatten slightly. Cook 3–4 mins per side until golden brown.

Serve hot with sour cream, Greek yogurt, or a dollop of our Farm Store salsa!

Hot Tip: These fritters freeze like a dream. Double the batch and save some for later!
